  2. Allow milk to boil in a large, wide, and heavy saucepan over medium highheat.Boil it for around 2-3 minutes. Add a few lemon drops to themilk, it will start tocurdle. • Boilfor 5minutes,thenstrainout about 1 to 1/2 cup of the whey (milkywater) .This will assistto lessen thetartness of thecake. • Cook, stirring occasionally, until the milk has thickened and the whey hasevaporated. Thiswill take another15-20 minutes. • Stirinthesugar and cardamom until the mixture begins to come together. • This should take about 5 minutes. Reduce the heat to medium and continuetosimmerforanother4-5minutes,oruntilthe mixtureturns aslightly golden brown in color. • Transfer the mixture on the plate and press firmly into a 1 inch high squareshape. Optionally, topwith sliced pistachios. • Allowitrest forat leastan hourbefore slicinginto individualservings. • 2. Kalakand: Grate or finely crush 250-300 g paneer to make approximatelytightly packed cups.

Combine it thoroughlywith the ghee. • When it begins to thicken, add 1 tablespoon of ghee and continue to whisk. After around 8 minutes, the mixture will begin to form a mass. Add 1 tablespoon extra ghee at this point. The mixture will begin to leave the pan after about 3-4 minutes. This indicates that it is cooked andoftheproperconsistency.Overcookingwillresultinchewy halwa. Another method is to take a small amount of halwa in a spoon and let it cool slightly. If you can roll it into a ball without it clinging to yourfingers, it's done.If thehalwa is stillsticky, heat ita little longer. • MalaiPeda:Mixthericottacheeseinaheavybottomed pan. • Cookforanother5to7minutes. • Mixinthemilkpowder thoroughly.
