  1. Kosher Certification in Peru Kosher Certification in Peru Integrated Assessment Services provides IAS-KOSHER certification to products against Kashrut laws in Peru. What classifies something as kosher? To qualify as kosher, mammals must have split hooves and ruminate. Fish must have removable fins and scales to be considered kosher. Kosher species of meat and poultry must be ritually slaughtered in the prescribed manner to be kosher. Meat and dairy cannot be cooked or eaten together. To be kosher, wine must contain at least 9.6% alcohol and cannot be fermented with non- kosher products or derivatives. All fruits used to produce wine must also meet the requirements for kashrut. What is a non-kosher product? The Bible lists the basic categories of foods that are not kosher. These include certain animals, birds and fish (such as pig and rabbit, eagle and owl, catfish and sturgeon), most insects, and any shellfish or reptiles.
