  3. 2 1/2 cups all-purpose flour • 2 1/4 tsp baking powder • 1 tsp ground cinnamon • 1/4 tsp ground nutmeg • 3/4 tsp salt • 6 Tbsp unsalted butter melted, cooled • 6 Tbsp vegetable oil • 1 cup granulated sugar • 1 cup light-brown sugar packed • 1 1/2 cup sweet potato puree • 3 large eggs room temperature • 1 tsp vanilla Ingredients Sweet Potato Cake

INSTRUCTION:- • Preheat oven to 350 F and grease & flour two 8" cake pans. • In a medium bowl, whisk together flour, cinnamon, nutmeg, baking powder, and salt. • In a large bowl, whisk together sugars, melted butter, oil, sweet potato, and eggs. • Add dry to wet and mix until just combined. • Divide batter evenly between prepared pans and bake until a toothpick inserted into the center comes out mostly clean (approx. 35-40 mins). • Cool in pans on wire rack for 10 mins, then turn out onto wire racks to cool completely.
