  4. Why look at alternatives? • Quality of imported product • Shelf-life improvements- temperature, glaze • Health issues (sodium content) • Versatility • Alternative uses

Advantages of IQF tunnel freezing • Rapid freezing • Low core temperature when packed (-18 to -23oC) • Very good glaze- adjustable % • Re-freeze post glaze- double glaze possible • No time consuming brine prep/ dump • Very high quality end product • Long shelf life- oxidation, dehydration ($$$), freezer burn • Versatile, adjustable • Alternative uses- fish, vegetables

  11. End product • Product looks very good • Frozen to -18oC in approximately 20-30 minutes • Good glaze • Very little “snow” • Some loss of appendages (lot of drops) • Shelf life ?

Other notes • Some teething problems • Expensive but need to compare apples with apples • No additional blast freezing required (double/triple handling) - labour savings • Quite large- space considerations • Easy to clean • 400kg/hr but can run continuously with minimal labour • Could have higher throughput but with lower end temperature • Is very versatile
