T he Perfect Meal for Your Mum on Mother’s Day Mother’s Day is a day where you show your Mum exactly how much she means to you and how you appreciate all the things she has done for you in your life. You can show this through a lovely handmade card, a bunch of her favourite flowers or even a box of chocolates, but the options are endless. If you are struggling to get the money together for a present then why not treat her to a meal made by you. Breakfast Breakfast Method: 1.Firstly, crack your eggs into a bowl with a pinch of salt & pepper & stir in the milk 2.Beat the eggs with a fork until the mixture has an even colour 3.Bring the pan to a high heat and add the butter. Pour in the egg mixture & cook on a high heat for 2 minutes, making sure that the mixture is spread out evenly 4.When the eggs begin to set, use a spatula to push the egg towards the omelette centre. Add the tomatoes and most of the cheese and parsley. After this arrange the ham nicely and evenly on top 5.Cook the omelette for a further minute, making sure it doesn’t get stuck 6.Slide the omelette from the pan onto a plate, sprinkle the remaining cheese and parsley, then serve! Simple, but extremely tasty is a breakfast omelette. This is an easy recipe to follow, and can be cooked by the younger generation too! Meaning you have no excuse but to make your Mum this brilliant breakfast omelette. Ingredients: • 3 free range eggs • 1 tablespoon of milk • 1 tablespoon of butter • 1 finely chopped tomato • 2 tablespoons of grated cheese • 1 tablespoon of finely chopped fresh parsley • 2 thin sliced ham • Salt & Pepper So now you have all the ingredients, lets discuss the method behind this breakfast. www.emporiumcookshop.co.uk

Dinner Dinner Method: 1.Put the kettle on 2.Fry the thighs with oil in a casserole or a wide pan with a lid 3.Stir in the whites of the spring onions with the flour and stock cubes 4.Ones the flour has disappeared, gradually stir in 750ml hot water from the kettle 5.Throw in the carrots and potatoes. Cover and cook for 20 mins This is only one way that you can make an omelette, there are many different ingredients you can add, for example you could add sausages or bacon! So be sure to know what your Mum’s preferences are. If mornings aren’t your thing then why not treat your Mum to a homemade dinner instead, with the cold weather closing in you could make your Mum a easy one-pot chicken casserole, only taking 50 minutes to cook! Ingredients: •7 bone-in chicken thigh (Make sure the skin is pulled off and discarded) •1 tablespoon of oil •5 sliced spring onions •2 tablespoons of plain flour •2 chicken stock cubes •2 large carrots (cut into batons) •400g new potato •200g frozen peas •1 tablespoon of grainy mustard •Small handful of fresh soft herbs Once you have cooked the casserole, take off the lid and let it simmer for 15 minutes, and then put the peas in for another 5 minutes. Add the seasoning, mustard and herbs and there you go, a quick but tasty casserole for your Mum on Mother’s Day.
