  5. Left to right: blender method; whisk by hand (middle front); cream puff method.

  6. Popover pans, deeper than muffin pans

  7. Leavening liquid ingredients heating to a high temperature and creating steam to push up batter

  8. Puffy pancake – uses the same concept as popovers – steam leavening in large pan

  9. Hollow, Smooth Center!
