  1. VEGAN CHEX MIX When I was a kid, I loved Chex Mix. In fact, I ate it by the handful without knowing what was in the magic mix. Now, I still eat Chex Mix, but my own Vegan Chex Mix version. First, all you need are 4 basic ingredients: Rice and Corn Chex Cereal, pretzels and nuts. Then, you just need to make the sauce to toss the cereal mixture. All you have to do is put the 4 basic ingredients in a large bowl and toss with the vegan butter/seasoning mixture. Not only is it simple, but the

  2. combination of flavors in the Skinny Vegan Chex Mix are also savory and sweet. If you like it spicy, make sure you use the paprika; if not, skip the spice. Remember, you can always add spice, but you can’t take it away. Vegan Chex Mix does contain vegan butter, but only a quarter of the traditional recipe. Similarly, I used maple syrup to sweeten instead of white or brown sugar. Also, you can make different flavors by using the seasoning combination in my ​Oil-Free Curried Cashews,​ for instance. INGREDIENTS SKINNY VEGAN CHEX MIX ● 3 cups corn chex ● 3 cups rice chex ● 1 1/2 cups pretzels (gf if desired) ● 1 1/2 cups salted peanuts ● 6 Tablespoons vegan buttery spread (I used Earth Balance) ● 1 Tablespoon Pure Maple Syrup ● 1 Tablespoon ​Vegan Worcestershire Sauce​ (I used Annies) ● 1 Tablespoon ​Tamari ​(or soy sauce) ● 1 teaspoon. onion powder ● 1 teaspoon. garlic powder ● 3/4 teaspoon smoked paprika ● 1/4 teaspoon garlic salt (more/less to taste) INSTRUCTIONS ● Preheat oven to 250. ● In a very large mixing bowl, add Chex, pretzels, and nuts. ● Melt the vegan butter in a microwave-safe bowl. ● When melted, add maple syrup, Worcestershire, Tamari, paprika, onion powder, garlic powder, and salt. Stir. ● Whisk the vegan butter mixture ● Pour it over the Chex mix. ● Gently stir for 1-2 minutes to thoroughly combine (I used my hands) ● Place on a baking pan with a ​silicone baking mat​ or parchment paper, and spread evenly. ● Bake for 1 hour, stirring every 15 minutes. ● Let cool and store in an airtight container. ● It will last up to a week in a container.
