  3. Pot • 1. Turn heat to medium-high • 2. Add oil to pot

  5. Veggies: • 1. Finely dice onions

  6. dice onions • A. Slice top and bottom off onion • B. cut in half

  7. dice onions • C. slice onion vertically leave the top untouched • D. Cut onions across the first cuts

  9. 2. Finely dice celery

  10. 3. Finely Chop Carrots

  11. Mix Team: • 1. Place onion and garlic into pot. • 2. Cook about 10 minutes until they are "translucent"

  12. Mix Team: • 3. Be sure to stir • 4. Add celery, carrots and salt/pepper

  13. Mirepoix

  14. Mix Team 2: • 1. Open cans of tomatoes • 2. After all veggies are soft, add tomatoes and 2 bay leaves to pot • 3. Use a mashed potato masher to carefully mash tomatoes. • 4. Simmer over low heat until the sauce thickens, about 40 minutes.
