  2. #1 Potato Potato is an edible tuber and considered as a starchy rich vegetable. A wide varieties of recipes use potatoes which are eaten as boiled, steamed, mashed, roasted and in various other ways.

  3. #2 Eggplant The tropical, perennial, delicate vegetable with dark purple or greenish in color is eggplant. For vegetarians it is the substitute of meat. It is used to make chutney and curries. Parmesan grilled eggplant is the popular recipe of it.

  4. #3 Okra The edible green seed pods are called ladies finger. This is seen widely in Southeast Asia and American Deep South. Nutritionist say one cup of Okra delivers 172mg of calcium.

  5. #4 Cabbage A dense leaved vegetable crop is known as cabbage. Though it is a vegetable crop but is also used in salad making. Detox apple, lemon, ginger, garlic make a good combination with cabbage. Cabbage roll is another popular recipe of it.

  13. #12 Turnips This root vegetable grows in temperature climate and is purple to whitish in color. Sauces, juices and curries of these vegetables are both tasty and healthy.

  14. #13 Carrot Carrot cake, carrot juice, Halva are common dishes made of carrot. Carrot is enriched with vitamin A, calories, beta carotene, sodium, potassium and so on. It is used in salad, seasoning, dessert, soup and so on.

  16. #15 Beetroot For lowering blood pressure and increasing health immune system beetroot is a good choice. It is nothing but the taproot portion of beet plant which is dark pink in color. Beetroot is baked, cooked, steamed, and boiled for eating as curry. It is also eaten as juice, salad, pickle and so on.
