  4. Farmhouse Cheese • Background information on farmer - Age 47 - Married with 5 children - Wife has an off-farm job - Dairy farming for over 20 years - Farmer has completed various courses on dairying - Wife completes the accounts for the farm - Children all to young to help out on the farm

Farmhouse Cheese • Background Information on the Business - New business based on farmhouse cheese production - Milk for the cheese production is used from existing dairy herd on the farm - Business has created three full time jobs and up to seven part time jobs in the summer - Production process acts as a tourist attraction for primary school tours during the summer - Farmer first started producing cheese on a small scale in 1989

Farmhouse Cheese • Background Information on Business Ctd. - Origin of idea: Farmer’s grandfather was involved in cheese making on a small scale - Farmer and his wife made the decision to diversify into cheese making - Two main reasons to diversify were to bring in extra income, and interest the farmer had in the product - Received financial assistance from Waterford Leader Partnership

Farmhouse Cheese • Phases in Developing the Business - Securing additional quota from the Department of Agriculture - Business received both feasibility and marketing assistance from the County Development Board - Waterford Leader Partnership assisted in the physical development of the business & the marketing of the product - Developing the cheese making product & promoting the tourism side of the business

Farmhouse Cheese • Additional Information - Obstacle: Consumers taste is constantly changing - Easy: Everything was hard work when setting up, but farmer had a great interest in cheese making - Farmer completed a number of courses on cheese making - Farmers income has increased as a result of developing the alternative enterprise - Advice to other farmers; “having an interest in the alternative enterprise is very important, this keeps you going when the going gets tough”

Case Study Two - Mini Farm • Background Information on Farmer - Age 34 - Married with 2 children - Wife has a full time job off the farm - Full time dairy farmer for over 12 years - Farmer has completed a number of courses on dairying - Wife completes farm accounts - Children too young to work on farm

Mini Farm • Background Information on the Business - New business is based on the idea of using existing farm animals from the farm and buying in some new farm animals to show to people who call to the mini farm - Farmer uses existing farm land for the mini farm - New business has created 5 seasonal jobs - Farmer has built a tea room beside the mini farm which creates extra income - Mini farm opened in 2002

Mini Farm • Phases in Developing the Mini Farm - Visited six other mini farms - Sought advice form Teagasc Advisor - Applied for planning permission for tea room and for new sheds to house animals - Received marketing assistance form County Development Board - Applied for grant aid to Waterford Leader Partnership - Advertised in local papers, schools, magazines, etc

Mini Farm • Additional Information - Obstacles: Insurance is very high: time consuming for farmer - have to be there to give guided tours - Easy: No extra travel is needed to go to work, farmer likes animals and he still gets to work with them - No courses were needed to develop this business - Family income has increased as a result of the new business - Advice to other farmers: “Be prepared to spend long hours in setting up the business”
