Breakfast on the Big Green Egg Most Eggers don’t give a second thought to cooking lunch, dinner, snacks, deserts, pizzas and even bread on the Egg but rarely does anyone cook breakfast on the Egg. I say, “Why not breakfast?” So today we are going to cook up two breakfasts that are easy, fun and very tasty. The first is a good ‘ol American standard: bacon, sausage, eggs and pancakes. Then we will cook a Breakfast Quesadilla; a combination of Southwestern Style Eggbeaters, Owens Pork Sausage, Some Mexican style cheese cooked separately and then heated between two large flower tortillas. And no breakfast is complete without biscuits. So biscuits it is.

Ingredients and equipment needed… Obviously, you will need a Big Green Egg, preferably lit and stabilized at about 350° with a cast iron griddle for some of it and a plate setter/pizza stone for the rest. The cast iron griddle for cooking the eggs, sausage, bacon and pancakes will look something like this: I picked this one up at Academy for about $10.00. It is setting on a Wok ring compliments of Sandbagger but if you don’t have one you can set it on top of your regular grill. The plate setter and pizza stone gives you the advantage of increased height and ceramic mass, both very good for baking the biscuits and Breakfast Quesadillas.. Here’s what it should look like” (Just forget about the pizza on top and think of biscuits and quesadillas) You will also need some pancake batter, bacon, eggs and sausage for the Grand Slam, and some tortillas, Eggbeaters, pork sausage and cheese for the Breakfast quesadillas.

  4. What is a Breakfast Quesadilla? I call is a Quesadilla because it is constructed somewhat like a Quesadilla using two tortillas. And it contains meat and cheese. More specifically, four types of cheese, and sausage and some Southwestern Style Eggbeaters. That’s it. Very simple and Big Green Egg friendly. Slices of a Breakfast Quesadilla However, just as with ABT’s, it quickly became apparent that you could substitute different ingredients and techniques that makes the breakfast experience even more adventurous. Some of these ideas include using Canadian Bacon or sliced smoked sausage or Spam or chorizo (the list is almost endless) while also using a wide range of cheeses and seasonings. The best advice is to experiment with the types of ingredients that you like then practice, practice, practice.

  5. Big Green Egg Grand Slam Breakfast This one is fun and easy, and familiar to just about everyone. You will need a cast iron griddle and your regular breakfast items: Eggs, sausage, bacon, pancake mix and some Pam spray. Simply heat your Egg to about 350° with the griddle in place. Spray a little Pam on it and start cooking the individual items. Here’s what it might look like while cooking:: But here’s what it will look like when ready to eat: You are encouraged to try different ingredients and methods of cooking. For example, the eggs could be an omelet or scrambled if you prefer. Likewise, the bacon could be ham or Spam. Just use your imagination. Try it the next time you really want to start the day off right.

  6. Tips This is one of those breakfasts everyone knows how to cook on a regular stove. Try it on a Big Green Egg and you will love the uniqueness of it. For the pancakes, I just use the Add Water type, shake for a minute and pout on the griddle. They are light, fluffy and very tasty with your favorite syrup. Our family now prefers turkey bacon and turkey sausage but we often switch back to the real thing. Since this is a special meal, I say eat what you want to eat. As for Eggs, you can use the Eggbeater type eggs for most anything calling for eggs. Experiment with the different varieties. They are very tasty and much better for you.
