  1. Yesterday and today cookery comparison We discovery our food evolution talking whit grandparents. Based in the past on healthy foods as vegetable and pulses, today is oriented on use of carbohydrates and sugars. Let go to analyse the main change of our cooking traditions…

  2. … Breakfast • YESTERDAY: bread and milk was the typical breakfast of our grandparents; simple and genuine (unsophisticated).

  3. TODAY: breakfast is very fast, loosing its role of one of the fundamental meal of the day is much more caloric than in the past.

  4. … The Lunch • YESTERDAY: the main point of the lunch was the sharing. Seated around the table, all family members eat together from a big cup. The main traditional disk was the bean soup added with black olive, fried peppers, onions and chicory as vegetable.

  5. TODAY: lunch today is mainly based on proteins and carbohydrates; too much opulent and substantial food. As example pasta with cream and ham and meat.

  6. … THE SNACK • YESTERDAY: The snack in the past was based on dried fruit and “taralli” bread handmade.

  7. TODAY: Snack today are based on chocolates and industrial made products.

  8. … THE DINNER • YESTERDAY: Our grandparents used end the day with a healthy dinner. They eat “focaccia” bread filled with onions and olive in junction with fresh ”cialledda” prepared with wetted dry bread, tomatoes, potatoes, oregano and onions.

  9. TODAY: going out with friends, we are used eat pizza. The most popular menu is wurstel with fried potatoes pizza (no light no healthy) and coke as drink.

  10. … THE SWEETS • YESTERDAY: Different sweets are used to eat at the end of the dinner: “Cartellate”, Stuffed “Focacce”, etc…. handmade by grandmothers and great-grandmothers.

  11. TODAY: Sweets are bought into bar and confectioner’s. Sweets can be also found into supermarkets as industrial made products.
