  3. Phase IEffective November 28, 2016 Experts in foodservice management and food safety

  4. Regulations Five regulatory sections were fully implemented in this phase: • Resident assessment • Quality of life • Physician services • Laboratory, radiology, diagnostic services • Specialized rehabilitation Experts in foodservice management and food safety

Regulations Dietary Services §483.60 renamed to Food and Nutrition Services Additions to §483.60 Food and Nutrition Services include: • Continues food and nutrition protections - food safety • Qualified food and nutrition services staff - sufficient and competent • Reasonable efforts to address religious, cultural, and ethnic needs • Frequency of meals - snacks • Policy regarding use and storage of foods • Updated educational requirements (dietitian and food service manager) Set training and certification standards are now in place for the Director of Food Services in LTC facilities and is met by the Certified Dietary Manager (CDM) credential!   7. Requirements Food Services Directors hired after November 28, 2017 ARE NOW REQUIRED to be Certified Dietary Managers OR meet the qualifications specified in the regulation. The CDM, CFPP credential is now listed as the primary qualification for the Director of Food and Nutrition Services (in the absence of a full-time dietitian.) The CDM, CFPP is the only credential that has a Scope of Practice. This allows for participation on the care planning team. Experts in foodservice management and food safety

States Recognizing the Credential 18 states recognize the CDM, CFPP Credential Alaska Arkansas California Delaware Florida Hawaii Illinois Iowa Kansas Maine Maryland Mississippi North Dakota Oklahoma South Carolina South Dakota Tennessee Wisconsin Experts in foodservice management and food safety

States Recognizing the Credential Government Affairs committee members are mentoring these states by contacting and writing a letter to: • State Registered Dietitians • Survey Departments • Legislators/governors The committee members are providing an overview of the CMS long-term care requirements and urging state officials to implement this language into their state regulations.
