Honey-Chipotle Pecans Ingredients: 2 tablespoons honey 1 1/2 teaspoons dried chipotle powder 3/4 teaspoon ground cinnamon 2 cups pecan halves 2 tablespoons sugar 3/4 teaspoon salt Directions: • Preheat oven to 325°F. • In a skillet, warm honey with chipotle powder and cinnamon over low heat, then add the nuts and stir to coat evenly. • Line a baking sheet with parchment paper, then spread nuts evenly in a single layer on the sheet. • Bake in preheated oven until nuts are fragrant (10-15 minutes). • Allow to cool slightly (1 minute). • In a mixing bowl, combine sugar and salt. • Add the warm pecans, and toss to coat evenly. • Spread out on fresh sheet of waxed paper and let dry completely.

  3. Amy Dunne Appetizer recipe for Honey- Chipotle Pecans When I relate Amy Dunne to a food, I immediately think of an appetizer. Her personality is great… in small doses just like an appetizer. If you eat too much of an appetizer, you might not like the food as much and this is just like Amy. At first Nick was very intrigued by Amy as she was beautiful, funny, kind,and rich. However, once he married her he realized that she might be too much of a good thing. This is why I chose Honey- Chipotle Pecans to represent this character. The honey means she can be sweet and the chipotle shows that she has fire in her. In a very bad way….

  4. 2. Funny Cake Funny Cake: This Pennsylvania Dutch pie is called a 'funny' cake because it is really an upside down cake in a pie crust. Ingredients One 9-inch pie crust, store-bought or homemade 1-1/4 cups cake flour, sifted 1 teaspoon baking powder 1/2 teaspoon salt 3/4 cup granulated sugar 1/4 cup shortening 1/2 cup milk, room temperature 1 teaspoon vanilla 1 large egg, unbeaten, room temperature Directions: • Preheat oven to 350° F. Sift together the flour, baking powder, salt and sugar. Cut in the shortening. Add the milk and vanilla. Beat for 2 minutes with electric mixer. Add the egg and beat 1 minute more. Pour batter into pie crust. Pour prepared chocolate (see recipes below) over batter. Bake for 40 to 45 minutes or until top springs back to touch. Serve warm with whipped cream or ice cream, if desired. Leftovers can be refrigerated, then brought to room temperature before serving. Fudge Sauce 1/4 cup unsalted butter 1/2 cup granulated sugar 2 ounces unsweetened chocolate, melted 3 tablespoons water 1/2 teaspoon vanilla Directions: Place butter, sugar and melted chocolate in small saucepan. Bring to a boil over low heat, stirring often. Add water and bring back to a boil. Boil for 2 minutes and continue stirring. Remove from heat and stir in vanilla. Pour hot sauce as evenly as possible over cake batter. (Do not spread the sauce or it might cool and thicken before you get it into the oven.) Bake as directed above.

  5. Margo Dunne Dessert Recipe for “Funny Cake” Nick has a sister named Margo Dunne. She is funny and very out-going. Whenever Nick is upset (which tends to be a lot due to the loss of his job, the misery of his marriage, and the health of his parents) he turns to Go for comfort. When I found a recipe for Funny Cake, I knew that this was perfect for Go’s personality. She is like dessert, as it is a treat when Nick gets to talk to her, and is an incredibly funny person in this story.

Gazpacho Ingredients1 hothouse cucumber, halved and seeded, but not peeled2 red bell peppers, cored and seeded 4 plum tomatoes1 red onion 3 garlic cloves, minced23 ounces tomato juice (3 cups) 1/4 cup white wine vinegar1/4 cup good olive oil 1/2 tablespoon kosher salt1 teaspoons freshly ground black pepperDirectionsRoughly chop the cucumbers, bell peppers, tomatoes, and red onions into 1-inch cubes. Put each vegetable separately into a food processor fitted with a steel blade and pulse until it is coarsely chopped. Do not overprocess!After each vegetable is processed, combine them in a large bowl and add the garlic, tomato juice, vinegar, olive oil, salt, and pepper. Mix well and chill before serving. The longer gazpacho sits, the more the flavors develop.

  7. Nick Dunne Main Dish: Gazpacho Soup Nick can be warm & Nick can be cold…. just like soup, which is why I chose soup to represent his personality. Nick seems to have two sides to him. As he tells his side of the story, he portrays himself as warm and caring. However, when Amy tells her version of the story, Nick is a smooth talking, cold man who doesn’t really care about anyone but himself. In fact, everyone believes that Nick has killed Amy in cold-blood. Since the cops also see this cold, slick version of Nick, I have decided he is going to be represented in my book with a cold, smooth, red soup.

Sweet and Sour Chicken Ingredients: 1 (8 ounce) can pineapple chunks, drained (juice reserved) 1/4 cup cornstarch 1 3/4 cups water, divided 3/4 cup white sugar 1/2 cup distilled white vinegar 2 drops orange food color 8 skinless, boneless chicken breast halves - cut into 1 inch cubes 2 1/4 cups self-rising flour 2 tablespoons vegetable oil 2 tablespoons cornstarch 1/2 teaspoon salt 1/4 teaspoon ground white pepper 1 egg 1 1/2 cups water 1 quart vegetable oil for frying 2 green bell pepper, cut Directions • In a saucepan, combine 1 1/2 cups water, sugar, vinegar, reserved pineapple juice, and orange food coloring. Heat to boiling. Turn off heat. Combine 1/4 cup cornstarch and 1/4 cup water; slowly stir into saucepan. Continue stirring until mixture thickens. • Combine flour, 2 tablespoons oil, 2 tablespoons cornstarch, salt, white pepper, and egg. Add 1 1/2 cups water gradually to make a thick batter. Stir to blend thoroughly. Add chicken pieces, and stir until chicken is well coated. • Heat oil in skillet or wok to 360 degrees F (180 degrees C). Fry chicken pieces in hot oil 10 minutes, or until golden. Remove chicken, and drain on paper towels. • When ready to serve, layer green peppers, pineapple chunks, and cooked chicken pieces on a platter. Pour hot sweet and sour sauce over top.

  9. DesiCollings Main Dish: Sweet and Sour Chicken Poor Desi Collings, he was always in love with Amy, and she knew it. She led him on when they were in high school and even as adults continued to call him just to make sure that would be willing to help her out whenever she needed something. He was very rich, and never minded lavishing her with gifts. Desi sounds perfect, right? Wrong. Desi might be sweet, but he definitely had a sour side. At times, it seemed Desi was a stalker and a bit on the odd side. Sweet and sour chicken was the perfect recipe to represent two sides to this unusual character.

Chocolate Therapy Cake Cake Layers 3 ounces fine-quality semisweet chocolate  1 1/2 cups hot brewed coffee or hot water 2 1/2 cups all-purpose flour 3 cups sugar 1 1/2 cups unsweetened cocoa powder 2 teaspoons baking soda 3/4 teaspoon baking powder 1 1/4 teaspoons salt 3 large eggs 3/4 cup vegetable oil 1 1/2 cups full fat sour cream 3/4 teaspoon vanilla 2 cups (about 6 oz.) chocolate-dipped cookies such as Keebler Fudge Stripe, roughly choppedChocolate pudding buttercream1 cup sugar 1/4 cup cornstarch1 cup hot (almost boiling) water 4 oz. semisweet chocolate1 cup unsalted butter, softened 2 cups confectioners' sugar, sifted1/4 cup unsweetened cocoa powder (preferably dark), sifted 1/4 teaspoon salt1/2 teaspoon vanilla extract Assembly3/4 cup chocolate sprinkles14 chocolate-dipped cookies such as Keebler Fudge Stripe (Next Slide for directions)

  11. Chocolate Therapy Cake Cont. • Preheat oven to 300°F.  Grease three 9-inch round pans with shortening. Line bottoms with rounds of parchment paper and grease paper. • Finely chop chocolate combine it in a bowl with hot coffee or hot water. Let mixture stand, stirring occasionally, until chocolate is melted and mixture is smooth. • Sift together flour, sugar, cocoa powder, baking soda, baking powder, and salt into a large bowl. In another large bowl with an electric mixer beat eggs until thickened slightly and lemon colored (about 3 minutes with a standing mixer or 5 minutes with a hand-held mixer). Add oil, sour cream, vanilla, and melted chocolate mixture to eggs, beating until combined well. Add flour mixture and beat on medium speed until just combined. Fold in chopped cookie pieces with a rubber spatula. Divide batter between 3- 9” pans and bake in middle of oven until cake springs back when pressed in the center, approximately 40-50 minutes. • Cool layers in pans for 15 minutes on racks. Run a thin knife around edges of pans and invert layers onto wire racks. Carefully remove parchment paper and cool layers completely. Cake layers may be made 1 day ahead and kept, wrapped well in plastic wrap, at room temperature. • For the frosting, whisk together sugar and cornstarch in a medium saucepan. Add the chocolate and hot water, let stand a moment, then whisk until chocolate is melted. Place the saucepan over medium-high heat and whisk constantly until mixture boils.  • Let cook until thickened to a pudding-like consistency. Remove pan from heat and transfer pudding to a metal bowl. Place metal bowl in a larger bowl filled 1/3 full with ice water. Beat pudding on high speed with a hand mixer until cooled.  • Beat in butter,  cocoa and confectioners' sugar. Add in salt and vanilla extract. Beat on high speed until fluffy. • To assemble, place a cake layer on a cake stand or serving platter; cover top evenly with about 1/3 cup of frosting. Stack on another cake layer and top with another 1/3 cup frosting. Stack last layer on top. Transfer about 1/3 cup of frosting to a piping bag fitted with a large star tip; set aside. Coat entire cake with the remaining icing. Set the frosted cake (still on the cake stand) in a clean, dry, empty kitchen sink and toss sprinkles onto the sides of the cake. Brush away excess sprinkles around the bottom of the cake with a dry pastry brush. Using the reserved piping bag of frosting, pipe small stars around the top edge of the cake. Place whole cookies standing upright into the top edge of the cake between piped stars. Sprinkle top with additional chocolate sprinkles, if desired.

  12. Rand and Marybeth Elliott Chocolate Therapy Cake reflects Amy's father and mother perfectly. They are both child psychologists and love their only child very much. So much, in fact, that they wrote a book series called Amazing Amy to honor her. Unfortunately, this book series made Amy out to be perfect and she spends her whole life trying to live up to these high expectations. For two experts in the field of children, they should have known that they were hurting their daughter by creating unachievable expectations!
