  2. There is much talk today about Superfoods; these are foods that are nutrient rich in compounds beneficial for a person’s health and overall well-being. Many of them are called Antioxidant food because they have a high ORAC value or Oxygen Radical Absorbance Capacity. Being a spice, it is not usual to eat a large portion of it, but a teaspoon in a dish will provide many benefits. Sumac measures at 312,400 per 100 grams; this is 60 times more than blueberries, which are recognised as being very high in antioxidants. • This very tasty spice is often used to flavor many Mediterranean type dishes, especially chicken and lamb and sauces

They are also full of other health benefits such as all the 9 essential amino acids and 3 times as many omega-3 fats as salmon. • They are commonly used in baking, especially to replace the protein when baking without wheat flour.
