  5. 2,3-Diethyl-5-Methylpyrazine • Alkylpyrazines - 有超過70種已被發現 - 存在於許多的食物、飲料還有食物處理工廠 排放的廢氣中 - 2,3-Diethyl-5-Methylpyrazine (DM)為主要造成食 物香味的化合物之一(Grosch, W. 2001.)

  6. 研究動機 • DM在許多食品工廠下所排出的廢氣中最主要形成惡臭的化合物之一 • 可將DM礦化的菌株未被分離出來

  7. 目的 • 篩選出可降解2,3-diethyl-5-methylpyrazine(DM)的微生物並測試其降解DM的能力 • 主要的中間代謝產物 • 酵素是否參與誘導降解的反應 • 其他pyrazine的轉換

  8. 實驗架構 篩選並分離可降解DM的菌種 菌種鑑定 DM-11的生長及對DM的降解 中間產物鑑定 進行酵素誘導試驗 代謝其他Pyrazine DHM降解鑑定

  9. 樣本來源 • 德國食品工廠中已被orodorous compound所污染的soil sample、liquid medium、biofilter material等樣本

  10. Nitrogen-free mineral medium (NF-M1) 不添加(NH4)2SO4之M1,以DM作為氮源 材料 • Mineral medium(M1)---pH 6.75

  12. 結論 • 發現降解DM的新菌種DM-11

  13. 應用性 • 藉由該菌改善由DM造成的空氣污染
