  3. INGREDIENTS: – Egg white: 120 gm – Powdered sugar: 215 gm – Almond meal: 140 gm – Granulated sugar: 80 gm – Cocoa powder: 50 gm

METHOD: – Place the egg white in the large bowl of the KitchenAid Stand Mixer and covered, and allow coming to room temperature. – Place the powder sugar and almond meal in the KitchenAid Food Processor and process to a fine powder. – Take KitchenAid Stand Mixer bowl whip the egg whites on 2 rd speed until the formation of foam (around 10 minutes). Slowly and gradually add granulated sugar and increase the kitchen aid speed into 3 rd level until the meringue holds stiff peaks (around 5 minutes) – Remove that KitchenAid Stand Mixer bowl and add the almond meal/powder sugar mixture, cut and fold until the batter drops from your spatula – Place the batter in a pastry bag fitted with a large round tip. Pipe 1- inch diameter. – Preheat the oven to 130 degrees centigrade; allow the macaroons to dry for 20 to 30 minutes. – Place in the oven for baking around 18 to 20 minutes. – Assemble the macaroons with a thick chocolate ganache take a macaroons shell pipe dark chocolate ganache and then top with another macaroons shell.
