Mission Statement • We at the RKR will consistently strive to provide each of our guests with a dining experience second to none. • With only the finest ingredients, a knowledgeable staff, and a steady work ethic, we will uphold this commitment to you. • With our name on the line, we extend an invitation to you and yours, to discover the difference between dining out, and dining at the RKR.

  3. Objectives • We will strive to have 75% occupancy at least two days during our management week. • We will get at least 10% of our guests to order dessert. • We will get at least 5 perfect comment cards during our management week. • Increase Net Sales by 2%.

Objective 1 • We will strive to have 75% occupancy at least two days during our management week. • Actions/ Strategies: - Promote through the Cal Poly Marquee - Send a mass email to the Collins School Faculty/ Staff and students through Donna Dannan - Have visual flyers across the campus - Have table tents in food courts on campus

  5. Objective 2 • We will get at least 10% of our guests to order dessert. • Actions/ Strategies - Up selling to our guests through a visual display- dessert tray - Making sure servers will offer dessert to every table

Objective 3 • We will get at least 5 perfect comment cards during our management week. • Actions/ Strategies - Provide a comment card with each check presented - Explain comment card and ask that it be filled out to provide accurate feedback - Guarantee that the Service Manager will personally remedy any concerns or issues to ensure a perfect dining experience

  7. Objective 4 • Increase Net Sales by 2%. • Actions/ Strategies: - Up sell Manager’s Special through scripts for servers.

Manager’s Special • Carrot-Raisin Salad - A creative combination of fruit and vegetable, sure to please even the most skeptical of tasters. • Barbecued Shrimp and Cornbread-Stuffed Peppers - An original Southern favorite, this dish combines multiple flavors of the Bayou. A perfect blend of ham, cornbread, garlic, and bell pepper crowned with rustic barbequed shrimp. • Honey Baked Apples and Pears with Whipped Cream and Cinnamon - Sweet and sticky, this confection is the perfect course finale.

  11. Marketing Plan and Tactics • Community - Marquee - Email to Collins School Students - Flyers throughout Collins School - Flyers throughout Campus - Table tents at Food Courts on Campus - Flyers to CSHM Faculty - Door Knobs to all Dorms on Campus and at The Village

Merchandising • In-House - Table Tents - Food Display -We will set up a food display with moss, fabric, candles and our management special everyday -We will have a colorful poster to greet every guest by the host stand - Selling Scripts for servers -We will have a script for servers to up sell and educate the guests on the subtleties of our Manager’s Special - Product Knowledge -All servers will know how the special is prepared along with it’s ingredients -Servers will know exactly how the Manager’s Special tastes - Decorations -Moss and Fabric -Candelabras -Glass bowls with flowers and tea lights for centerpieces -Table tents of the Manager’s Special

Other Team Expectations • We will be working with Dustin Marshbank, Myeong-Jun Son, Prunella Wong, and Audrey Mangan because they are the Management Team for Dinner for Week 2 • Our set-up would include making sure the kitchen is clean and ready to go for the Dinner Class. Also, the dining room will be set to their specifications, due to the different configuration.
