  1. Firni: Give Your Taste Buds a Treat A delicacy that’s rich in history, a dessert that crossed borders to reach its destiny — Phirni! Introduced to India by the Mughals, the rich and creamy dessert is made across India on various festive occasions. Making this creamy and delicious phirni is effortless and easy! Let’s get started then, shall we!? Ingredients ● ● ● ● ● ● ● ¼ Cup of Rice 1 Litre milk Sugar (As Required) Almonds (Blanched and Peeled) Pistachios (Blanched and Peeled ½ Teaspoon of Cardamom Powder Saffron (As Required) How to make Phirni Step 1: Rinse the rice using water a few times and leave them to dry for a while. Step 2: Using a grinder, grind the dried rice until it has been ground finely and resembles sooji (Semolina or Rava) Note: Be mindful when grinding and make sure you don't grind it into fine powder. Step 3: Heat 1 litre of milk until it boils Step 4: While the milk is boiling, take 1-2 tablespoons of warm milk in a bowl and mix it with 12-14 saffron strands, and set it aside. Step 5: As the milk begins to boil, add the ground rice. Step 6: Stir and mix well. Step 7: Add sugar (as required) and stir again. Step 8: On low heat, keep cooking the rice granules. While cooking, make sure to keep stirring so lumps don’t form. Scrape the sides often and add it back to simmering milk. As the rice granules get cooked the milk thickens.

  2. Step 9: Once you see the rice granules are almost cooked, add cardamom powder and the milk that was mixed with saffron. Step 10: Now, add pistachios and almonds (Chopped and slivered) Tip: To blanch the nuts, soak them in hot water for 30 minutes. Remove them from the water and peel them. Once peeled, chop and slice them. Step 11: Cook the phirni for another 5 minutes until the rice is completely softened and you see creamy pudding-like consistency. Step 12: Add 2 teaspoons of rose water. If you don’t have rose water, then skip this step. Step 13: Keep it in the refrigerator for a few hours and serve the phirni in serving bowls with nuts garnished on top.
