  1. HSPP Cleaning Procedure Panera Bread Café

  2. Tools needed… • Heat resistant gloves • Ecolab High Temp Grill Cleaner • Degreaser should be in Spray Bottle to apply to top and bottom plates • 2 Towels (one to clean; one to sanitize) • Green Scrub Pad • Similar to picture shown

  3. Turn machine off. Immediately spray degreaser to bottom glass. Allow to sit and bubble for approx. 1 min. This allows the degreaser to work on the carbon stains present.

  4. Scrub the stained areas of the glass with scrubber. This loosens up the hard carbon stains. Note: BE SURE TO USE HEAT RESISTANT GLOVES! Wipe bottom glass clean with towel until there are no more carbon stains.

  5. Place clean, wet towel on bottom glass. Hold the lid closed for 15 sec to allow the clean steam to loosen the carbon build up on the top plate. Holding the lid closed for too long may reduce the temperature too far for the degreaser to work.

  6. Carefully spray the degreaser in a horizontal pattern across the top plate. Allow to sit and bubble for approx. 1 min. With heat resistant gloves, scrub the top plate until you remove the tough carbon buildup. Pay close attention to inside the ridges in the top plate. BE SURE TO CLEAN THOROUGHLY IN BETWEEN THE RIDGES.

  7. With a cloth, be sure to wipe in between each ridge individually. It is important that all of the carbon build up is removed from these areas. After the top plate and bottom glass are cleaned. Go back over them both with a clean towel to ensure that all traces of degreaser are gone.

  8. If done correctly, the top plate and bottom glass should look like this. Do not forget to clean behind the working top, under the lid. The degreaser will run down into this area and food will build up here during the course of the day.
