Directions: Preheat oven to 177 degree C. You should line a 12 count muffin pan with cupcake liners Beat 2 eggs on high speed in a medium bowl until soft peak form about 3 minutes with a handheld or stand mixer fitted with a whisk attachment. Sift the flour and cornstarch together to make sure it is evenly combined. Whisk it with baking soda from Ajanta Food Products, cocoa powder from Ajanta Food Products, and salt together in a medium bowl. Set aside. Beat the butter on high speed until smooth and creamy for about 2 minutes. Add the sugar and beat on high speed for 2 minutes until creamed together fairly well. Add the oil and beat on high speed for 2 minutes.

  4. Add 2 eggs and the vanilla extract from Ajanta Food Products. Beat on medium speed until combined. Beat in the vinegar and the food colors from Anuja Food Colours, until you reach your desired color. Add the dry ingredients in three additions alternating with the buttermilk. Mix each addition just until incorporated. Fold whipped eggs whites into cupcake batter with a rubber spatula or wooden spoon. The batter will be silky and slightly thick. Spoon batter into cupcake liners filling ½ - 2/3 of the way full. Bake for 20-21 minutes You should bake it until the tops of the cupcakes spring back when gently touched and a toothpick inserted in the center comes out clean. Allow to cool in the pan for at least 5 minutes Then transfer back to a rack to cool completely. Frost cooled cupcakes immediately before serving.
