#1 Classic tomato sauce for pasta Ingredients ●3 tablespoons olive oil ●1 large onion (finely chopped, about 1 cup) ●1 teaspoon garlic (finely minced) ●2 (28-ounce) cans tomatoes (crushed, in puree) ●3 tablespoons tomato paste ●1 teaspoon dried oregano ●1/2 teaspoon dried basil ●Optional: 1 pinch red pepper flakes ●½ teaspoon salt (kosher or coarse) Steps to Make It: 1.Heat the olive oil in a large saucepan over medium heat. 2.Add the onion and garlic, and cook for 5 minutes. 3.Add the tomatoes, tomato paste, oregano, basil, and, if using, red pepper flakes. Add salt and pepper and bring sauce to simmer. 4.Reduce heat to medium-low and simmer until sauce thickens slightly—about 20 minutes. 5.Enjoy!
#2 White sauce: Ingredients ●2 tablespoons butter ●2 tablespoons flour ●¼ teaspoon salt ●⅛ teaspoon pepper ●1 cup milk Steps to make it: 1: In a 1½ quart saucepan, melt butter over low heat. Stir in flour, salt and pepper. Cook over medium heat, stirring constantly until mixture is smooth and bubbly; remove from heat. 2: Gradually stir in milk. Heat to boiling, stirring constantly; boil and stir 1 minute. #3 Garlic and oil sauce: Ingredients ●⅓ cup extra-virgin olive oil ●¼ cup chopped flat leaf parsley ●1 tablespoon finely chopped garlic ●¾ teaspoon salt Steps to make it: 1.In a small skillet, combine ⅓ cup extra virgin olive oil, ¼ cup chopped flat leaf parsley, 1 tablespoon finely chopped garlic and ¾ teaspoon salt over medium-high heat. Once the garlic sizzles, remove from the heat. Makes ⅓ cup.
#4 Alfredo sauce: Ingredients: ●¼ cup butter ●1 cup heavy cream ●1 clove garlic, crushed ●1 ½ cups freshly grated Parmesan cheese ●¼ cup chopped fresh parsley Steps to make it: 1: Melt butter in a medium saucepan over medium-low heat.
