  3. Kombucha History Kombucha History: Kombuchais fermented tea and sugar. Known as a SCOBY- Symbiotic Colony of Bacteria and Yeasts. It produces a semi-sweet, semi-sour, slightly carbonated and pleasant tasting tea. The Ancient Chinese referred to this elixir as the Tea of Immortality. Is KombuchaSafe?? Yes. But it may not be for everyone. Pregnant, nursing, infants, those with compromised immune systems, Some people become fatigued and quite tired - just the opposite of what the majority experience. Kombucha Tea - like any food - may suffer from contamination, poor hygiene, or a ferment gone wrong. Thankfully no one has ever died or become seriously sick from drinking kombucha tea. 

  4. How is Kombuchamade?? Kombucha, also known as the Manchurian Mushroom, is a simple naturally fermented culture, made with water, sugar and tea. Left alone this water, sugar, and tea mixture will naturally ferment from any of the numerous airborne and ground organisms that should find such a paradise. Most of the time mold results.  The origins of Kombucha has been attributed to China - famous for its teas, (Cha) What makes Kombucha unique is the domination of a few selected airborne Acetobacter with compatible yeasts, which crowd out and dominate the stagnant, or left-over, or forgotten  tea. 

  5. Ginger Beer Recipes • Peel and grate the fresh ginger using a box grater. You want about 1/4 cup of grated ginger. • Add the cream of tartar (1/2 teaspoon), lemon juice (1/4 cup), and ginger to a large pot. • Add 4 cups of water, and bring the mixture to a full boil. • Turn the heat down to medium, add the sugar and stir until all of the sugar is dissolved. • Add the rest of the (cold) water to the pot (5 cups) and allow it to cool to around 75 degrees Fahrenheit (23 degrees Celsius). Add the yeast (1 teaspoon), stir well.

  6. Cover the pot with a kitchen towel and place in a warm, dark part of your house for 3 hours. The mixture should smell gingery and yeasty! • Using a fine strainer, strain the liquid into a large pitcher to remove all the bits of ginger. • Pour the brew into a clean 2-liter plastic bottle (empty soda water bottles work perfectly, and you can also use 2 one-liter bottles) but do not fill up the bottles all the way because the fermentation will yield carbon dioxide.
