Having roots in Mesoamerican cuisine, Mexican food has a history from back centuries. By the time the Maya civilization emerged, all crops were grown maize, and thus nixtamalization was discovered. The different cooking methods of Mesoamerican were used and then were transformed to create the Mexican food culture. By boiling corn with a base, such as lime or sodium hydroxide and soaking it for a long time, the skins around the corn kernels were removed. This makes corn easier to digest. The consequence? Mexicans not only got more nutrients, but their food also tasted better. The most common ingredients used in Mexican food are corns, beans, tomato, avocadoes, chili peppers, and sweet potato.
