I construct it that way, but it’s not complete until you’ve had the last bite.” The menu changes all the time but some standout examples I had on my visit included a duo of butter poached Maine lobster and pan friend Acadian redfish, also from the Gulf of Maine, on a bed of mascarpone enriched orzo. Another standout courses was a beet and goat cheese salad with pomegranate seeds and candied pecans, laid out on the plate like maze, just fabulous. The 4-course dinner is offered nightly with one seating and begins with a cocktail in the Inn’s classic New England Tavern before everyone moves into the dining room. The 7 and 12-courses Chef’s Tables menus are offered on demand (in advance) and served in the Paul Newman room, with optional wine pairing menus available. Both dinner options require reservations, but neither requires an overnight stay. The Lincoln Inn is located on the west side of Woodstock, beyond walking distance from the village center, and in winter is the closest lodging here to the popular Killington ski resort, the largest in Vermont. The Woodstock Inn & Resort, the town’s largest lodging destination (built by Laurance Rockefeller and originally part of his Rockresorts brand) offers guests free in town shuttle service and frequently ferries people to and from the Lincoln Inn for dinner as an alternative option.
