  1. Indian Filter Coffee: An Amassing Preference Of The World What makes a brewed cup of coffee in India so delightful and enriched in its flavor? One may say that it’s the inherent tradition and culture dating from old times; others may be under the opinion that it’s the love from the hands of Indianness, the pedigree of which can be traced as far back as the 17th century. Notwithstanding the cultural roots that go into the brewing by love, Indian Filter Coffee’s history is nestled within the South Indian districts, first introduced by Baba Sudan, who was a Sufi saint. He stole some coffee seeds from Yemen and brought them to the Chikmagalur district of Karnataka to sow them. Since then, South Indian coffee has had a calling in the world to be singled out as the hub of the finest coffee. What makes Filter Coffee worth the sip? The very tradition of filter coffee originated in South India. The special technique employed in the process of making filter coffee involves the use of a filter called the “dabara set”. Owing to its regional and cultural context, the coffee goes by other names like “Degree Coffee”, “Madras Coffee” and others. When a similar technique is used by employing an Indian filter outside of India, the coffee brewed is hence termed Filter Kaapi. The aroma? Taste? The process? Or the uniqueness? It owes its uniqueness to the special technique and Robusta and Arabica varieties of coffee beans employed in the making, proportioning the coffee bean extract and chicory to 70:30. The special name given to it is Kumbakonam Degree Coffee, of which the term ‘degree’ is a derogatory word from the culminated usages of chicory and the local pronunciation ‘tikery’. The production of Kumbakonam Degree Coffee is exclusive to its own city, and they have a “secret recipe” that allows the brewing of Filter Coffee to retain its original aromatic and pleasing flavor.
