  2. Kashmiri cuisine, the culinary tradition of the Kashmir Valley, is deeply influenced by neighboring regions in Central Asia and the Indian subcontinent. Rice has been a staple food in Kashmir since ancient times, and the local expression "haakh-batta" (greens and rice) is equivalent to the phrase "bread and butter" in English. This cuisine is predominantly meat-based, with Kashmir having the highest per capita mutton consumption in the subcontinent. Bread is not typically included in the majority of Kashmiri meals; instead, it is usually eaten with tea in the morning or evening. A typical Kashmiri meal includes a generous serving of rice (about 250 grams), mutton (100 grams), and vegetables (mostly greens, about 100 grams) cooked in oil, accompanied by yoghurt (ranging from 50 to 250 grams).
