Fresh and dried fig samples homogenized in methanol and 60% acetone adapted from Brand-Williams et al., 1995
Supernatants were aspirated. Homogenates were centrifuged.
Antioxidants react with free radicals ΔAbs 515 nm
Samples were compared with Trolox (water-soluble vitamin E analogue) in each solvent Trolox Standard Curve

Conclusions • Figs contain antioxidants; some dried figs may contain as much as green tea! • More investigation on this topic may reveal a marketable health benefit to consumers to eat more figs!
