Though traumatized and devastated, Croatians are resourceful survivors.
Many refugees found themselves in Kentucky
This influx of immigrants has enriched the lives of many Kentuckians with exposure to a culture rich in cooking tradition.
5. A Myth to Dispel Common Myth Croatian food is a lot like Russian and other Eastern European food.
This likely stems from the Croatian language sounding so Slavic, and often being confused by Americans with Russian language and culture.
Truth Croatian food has a strong Mediterranean influence.

Octopus and squid are delicacies in Croatian culture
For some Americans octopus and squid are an acquired taste. The texture can seem odd and cumbersome at first, but the flavor will soon prove to be colorful enough to enjoy the meal.
Octopus should not be mistaken for Squid, as these are different sea creatures

A squid has eight arms and two tentacles
An octopus lives on the ocean floor and scavenges for food
A squid lives in the open sea

Both have parrot-like beaks
Both have blue blood, from an oxygen making mechanism in the blood containing copper
Both are distant relatives of snails, though they have lost their shells during evolution
Both use ink as a defense mechanism
Both are a nutritious source of food

14. There are countless ways to prepare octopus and squid Baked and stuffed Fried or grilled
15. Things we will need Squid ( at least 1000 g)
One onion
Potatoes (three large)
Tomatoes (two medium)
Basil
Rosemary
Olive oil
Red wine
Salt and pepper
16. Wash, Clean, and Remove Ink Sack Wash the squid thoroughly
The ink sack can be saved for use as food coloring for rice, beans, or deserts
Cut arms and tentacles into slices the size of you choice, usually 3-5 mm thick
17. An Old Recipe for Squid In a pan, pour thin layer of olive oil (enough to cover bottom of pan, but not too much)
Frye the cut up pieces for four minuets careful not to burn squid
Remove from heat
Cut potatoes into wedges
Cut onions and tomatoes to suite taste
Stuff tentacles with the these vegetables, and/or others of your choice
18. Old Squid Recipe Next, put potatoes and squid in baking pan greased with olive oil
Add rosemary, basil, salt and pepper
Mix well
Bake at 325 F for 30-40 minuets
While still hot, shredded mozzarella cheese may be added if so desired

21. Instructions from Chefs.com Use the whole octopus, cut in pieces about 3-5 cm. The best is to use frozen octopus, even if you get fresh one, freeze it it will be mush softer. Take one large pan for baking in oven. Put some olive oil on bottom and than put potato cut thin almost like chips all around the bottom. Than put octopus, tomato cut in , onion cut in , olives, crushed garlic, salt, pepper, oregano, and on the tom rosemary. Pour the wine and olive oil. Cover with aluminum cover for households preventing steam to get out: very firmly. Put in the oven on 200C for 30-40 minutes.
