Ingredients - - - - - - - - - - 1 3/4 cups plain flour 1/4 cup Dutch-processed cocoa powder 3/4 cup icing sugar mixture 180g butter, chilled, chopped 3/4 cup brown sugar 1 egg 1 1/2 tablespoons milk 250g dark chocolate, chopped 1/2 teaspoon vanilla extract 220g milk chocolate, chopped Recipe for Chocolate-filled biscuits - - - Take refined flour, cocoa, sugar and 125 grams of butter in a food processor. Blend this well until mixture resembles like fine breadcrumbs. Add egg and milk. Blend it well until its dough comes together and become soft. Now use a lightly floured surface. Knead this dough well until smooth. Divide this dough in equal halves. Shape into two discs and wrap in plastic wrap. Refrigerate it for 30 minutes. Preheat this oven up to 180C/160C fan-forced. Line 2 big sized baking trays with baking paper. Roll one dough disc between 2 thin sheets of baking paper until. Use a cookie cutter and cut out equal squares neatly. Place each squares 2cm apart on greased trays. Repeat this with remaining dough disc and make total 50 squares. Refrigerate it for 10 minutes or until it becomes firm. Bake biscuits in a single tray at a time, for 8-10 minutes. Stand on trays for five minutes. Transfer them to a wire rack and cool completely. Place 50 grams of dark chocolate in a heatproof and microwave-safe bowl. Operate microwave on medium (50%) for a minute and stir halfway through with a metallic spoon. Let it melt and become smooth. Cool for 10 minutes. Use an electric mixer, beat icing sugar and rest of butter until it is light and fluffy. Add 5 drops of vanilla essence and melted chocolate. Beat it well. Sandwich biscuits together using 1 ½ teaspoons of chocolate mixture. Refrigerate for 20 minutes. Place milk chocolates and remaining dark chocolates in a heatproof and microwave-safe bowl. Microwave at medium flame for 2 to 3 minutes and stir it occasionally after every 30 seconds with a metal spoon. Until it gets melted and smooth. Place on a wire rack and set over a baking tray lined with baking paper. Dip the sides of baked biscuit in chocolate mixture and place on cooling rack. Put a tablespoon of melted chocolate syrup over each biscuit to cover well. Set aside for an hour or until set well. - - - - - - - - - -
