    2. Hand Maintenance Fingernails should be kept short and clean. Avoid nail polish or artificial nails. Cuts and sores should be treated and dressed. Wear a glove to protect bandages. Until an injury heals, move a food handler to another duty.

    3. Wash Hands After: Using the restroom Handling raw food (before and after) Touching the hair, face, or body Sneezing, coughing, or using a hankerchief or tissue Smoking, eating, drinking, or chewing gum or tobacco

    4. Handling chemicals Taking out garbage Clearing tables Touching clothing or aprons Touching anything else that could contaminate hands (unsanitized surfaces)

    5. Use of Gloves Replace after they become soiled or torn. Replace before beginning a new task. Replace at least every 4 hours. Replace after handling raw meat, and before handling cooked food.

    6. Proper Work Attire Wear a clean hat or hair restraint. Wear clean clothing. Remove aprons when leaving food-preparation areas. Wear appropriate shoes. Remove jewelry prior to preparing to serve food or while working around food-preparation areas.

    7. Policies Foodhandlers should not smoke, or chew gum while preparing or serving food, or while in food preparation areas. Foodhandlers should not eat or drink while preparing food, or while in food-preparation areas.

    8. Hygiene Program Follow hygienic hand practices. Maintain personal cleanliness. Wear clean clothing or uniforms. Avoid unsanitary habits. Maintain good health. Report illnesses and injuries.
