  2.  Prep Time: 5 minutes •  Cook Time: 5 minutes • Ingredients • 1/2 cauliflower (a cruciferous vegetable that is high in fiber, vitamins C and K, and potassium.) • 3 large potatoes (good source of carbohydrates and some fiber.) • 1 teaspoon turmeric (a spice that has anti-inflammatory and antioxidant properties.) • teaspoon salt (an essential mineral that helps regulate fluid balance and nerve function in the body.) • 1 teaspoon coriander (an herb that contains antioxidants and may help improve digestion) • 1 teaspoon cumin powder (a spice that has anti-inflammatory and antimicrobial properties.) • 2 tablespoons olive oil (a healthy fat that is high in monounsaturated fatty acids and improves brain function.) • 1 red onion (good source of fiber, vitamin C, and antioxidants.) • Handful fresh coriander • 3/4 cup coconut sugar a wonderful alternative to refined sugars

  3. Tahini Dress • 1/2 cup tahini made from sesame seeds, it is high in healthy fats, protein, and some minerals. • 1/2 cup lemon juice a good source of vitamin C and antioxidants, • 2 tablespoons olive oil • 1/2 teaspoon salt • warm water as needed to thin the dressing.

  4. Recipe Notes • Equipment you Need • Baking tray and baking sheet • Small bowl to make tahini • Wisk (best option to make creamy tahini) • Lemon squeezer/juicer

  5. Methods Mix all spices in a bowl (including salt) Break up the cauliflower into small florets. Mix all spices in a bowl (including salt) Place vegetables on a baking tray. Coat generously with the mixed spices and two tablespoons of olive oil. Bake in the oven at 180 degrees for 25 minutes. In a small bowl, make the tahini dressing by combining all the ingredients. Once mixed together, you will need to add warm water until you get the desired consistency. You want to be able to pour it over your vegetables, so ideally mix it until you get a thick dressing. 6. Place cooked roasted vegetables on a serving plate, top with fresh coriander, and drizzle with the tahini dressing.
