Colour Management Of Sweets The challenge faced by sweet manufacturers • Sweets tend to have irregular or curved surface • Can have either glossy or matte appearance • They have varying degrees of opacity • They can be very small and difficult to measure • Not always a solid colour, may be multiple colours • Use of natural colourants – Stability issues

Colour Management Of Sweets The traditional method of Quality Control has been either: • Visual Assessment • with uncontrolled or inconsistent viewing methods in terms of : • The Observer - subjectivity • Light Source • Angle of Observation OR • Instrumental Measurement (Spectrophotometer / Colorimeter) • with restrictions and limitation. . . . • Works well on flat, opaque objects – Very limited on curved or irregular surfaces. • Limited by aperture size, averaging the colour of the selected area. • Cannot differentiate between different colours in the selected area. • The xenon flash can be too powerful for translucent sweets. It will illuminate the sweet internally, influencing the colour measurement • The product can be distorted by the aperture

Measuring Sweets Using DigiEye • DigiEye does not have the aperture restrictions of a spectrophotometer • We can measure the whole imaged area • Allowing either accurate average colour • Very flexible selection of individual colours within the image • Software compensation for uneven surfaces • Non-contact – Does not distort the product • Measures the surface colour – as seen by the consumer • Visualise AND measure the colour differences • Shelf life/colour stability trials

Measuring Sweets Using DigiEye • Having an image allows you to be very selective of what you measure • Using sophisticated selection tools we can measure accurate non-solid colour • We can compare colour difference between standard and batch or batch to batch • Much more representative of how the consumer will view the colour

Colour Comparison Using DigiEye – An Example • Translucent products are very difficult to assess instrumentally • The background influences the colour • Using DigiEye we can select the whole object • Software correction limits the effect of the background • This allows us to give sensible colour difference values unlike traditional instrumental assessment

Colour Comparison Using DigiEye – An Example • DigiEye software correction offers benefits for opaque samples too • Note that the sample in the top right has a texture difference • This can influences the colour • We select the standard or recall it from a database • DigiEye then compensates for the structure and return accurate difference information

Measuring Surface Distribution Characteristics Using DigiEye • DigiEye can be used to assess the percentage distribution the ‘sour sugar’ coating • This information can be used to detect any deficiencies in the coating process • We can visualise using ‘false colour’ the coverage of the sugar crystals • We can see both visually and numerically that the sample on left has insufficient coating

Measuring Surface Distribution Characteristics Using DigiEye • DigiEye can also be used to assess other surface characteristics • Here we are assessing the area that the jelly ‘yolk’ has bled in to the ‘egg white’ • Again this information could tell us about production deficiencies • It was found that the coverage of the jelly ‘yolk’ was very consistent • The bleed however varied by almost 15% between maximum and minimum coverage
