  6. Les specialties' a manger • Provence is the birthplace of three world-renowned dishes: salade Nicoise, bouillabaisse and ratatouille. • Ratatouille is simply stewed vegetables--tomatoes, eggplant, zucchini, onion--swimming in fruity, garlic-tinged olive oil.

  7. Les specialtes' a manger • With dry, warm summers and cool, wet winters, the Provencal climate produces abundant fruits and vegetables that find their way into traditional cuisine. Typical vegetables in regional dishes includes peppers, mushrooms, artichokes, potatoes, beans, Swiss chard and squashes. Many sweet and savory Provencal dishes employ fruits and nuts, such as citrus, melons, apricots, peaches, cherries, quinces, figs, pine nuts and hazelnuts and almonds.
