While they can be purchased in grocery stores and farmers' markets, growing shiitake mushrooms from seeds is a simple and rewarding experience. This simple guide discusses properly planning shiitake seeds to ensure they grow successfully and produce a bountiful harvest. Step 1: Choose the Right Growing Medium The first step in planning shiitake seeds is to choose the right growing medium. Shiitake mushrooms grow best in hardwood logs, such as oak, maple, or sweet gum,bought from a top shiitake log manufacturer. You can also use sawdust or straw as a growing medium. If you choose to use hardwood logs, they should be freshly cut, as shiitake mushrooms prefer to grow on logs less than six months old. The logs should also be about four to six inches in diameter and about three feet in length.

To harvest them, twist the mushrooms off the log or cut them off with a sharp knife. Harvesting the mushrooms when young is essential, as older mushrooms will have a more rigid texture and a less pleasant flavor.
