Croque Monsieur This recipe is from France. Croque-Monsieur means 'Crispy Mister' in English! A Croque-Monsieur is a French-style, toasted sandwich, traditionally made with ham and cheese. While the origins of the Croque-Monsieur are unknown, there are many stories about how it was first made. One story is that, a long time ago, there were French workers who would bring their sandwiches to work with them. Some would bring ham and cheese and, since they didn't have coolers or refrigerators, they would leave their lunches by the radiators, and the cheese would melt!

Croque Monsieur - Method Method: Equipment: oven gloves chopping board grater sharp knife • Preheat the grill • Grate the cheese onto a chopping board – divide into 3 piles • Slice tomato • Place the slices of bread onto the chopping board • Lay the ham over one slice of bread • Arrange the tomato over the other slice • Sprinkle a portion of cheese over each slice of bread • Place each slice under the grill – when the cheese is ‘bubbling hot’ remove • Press the 2 slices of bread together and sprinkle remaining cheese on top • Replace under grill until the cheese is melted and golden. The Bridge Hold First, twist the stalk from the tomato. Place the tomato onto the chopping board. Make a bridge over the tomato with your hand. Your fingers should be on one side and your thumb should be on the other. Pick up the knife with your other hand and check that the blade is facing downwards. Then, guide the knife under the bridge and over the tomato. Cut into the tomato by pressing the knife down and pulling it out of the bridge. You might like to think of the knife as a train which goes under the bridge. This method of cutting is safe and can be used for lots of different ingredients, such as potatoes or strawberries.
