Meat Group Nutrients: • Meat, poultry, fish, dry beans and peas, eggs, nuts, and seeds supply many nutrients. These include protein, B vitamins (niacin, thiamin, riboflavin, and B6), vitamin E, iron, zinc, and magnesium. • Protein- everyday old body cells wear out and uses protein, your body maintains repairs and builds new cells. A body needs extra protein when growing or recovering from an injury.
Cholesterol and Fats • Cholesterol is a fatlike substance that our bodies manufacture. We also eat it in animal sources; especially egg yolks and organ meats such as liver. • Cholesterol is dangerous when it builds up in high levels in the blood and is deposited along the wall of the blood vessels. Leading to heat attacks, strokes and other health problems. • HDL=Bad Cholesterol • LDL=Good Cholesterol
Meat Group • Meat, poultry, fish, dry beans, eggs and nuts are high in protein. • Peanut Butter is also considered a meat substitute that provides a high protein snack. • Meat Extenders- are foods that make a small amount of protein go further. Ex. Oatmeal added to ground beef.
Ways to cook meat: • Costs determines the selection of meat that is used in a meal. • Tenderness of a meat determines which method of cooking will be used. • Braising/Stew: A type of moist heat. • Roasting: T type of dry-heat cooking. • Microwave: Saves time in preparing meat, fish and poultry.
Cooking with Beans: • Dry beans must be soaked before cooking. • Split Peas are an excellent meat substitute and sometimes are made into a soup.
Pepperoni Pizza Bagels • 1 cup pizza sauce/spaghetti sauce • 1 cup mozzarella cheese • 1 bagel/English muffin per person • 18 pepperoni’s • Preheat oven to 375 degrees • Spread 1 tbsp. of sauce on each half of English muffin. • Add enough cheese to lightly cover the English muffin. • Add 3 pepperoni’s to each English muffin. • Place on a cookie sheet and bake 8 minutes.
Pizza Rolls-Preheat 375 • Pizza Rolls • 1 lb. Pizza Dough • ½ stick of Pepperoni • 2 slices of Provolone Cheese • *Spread the dough on a greased cookie sheet. Then lengthwise down the middle of the dough, line up pepperoni. Then stack on top the cheese slices. Sprinkle with a DASH of garlic powder. Overlap the edges lengthwise, enough to pinch together. Put in a preheated 375 degree oven seam side down for 10 minutes. Serve with sauce.
