May 2014 Farmers Markets Farmers Markets are great places to get fresh fruits, vegetables, and other food products directly from the farmers themselves. Many farmers market foods often cost the same or less than store bought foods and most even take food stamp and WIC benefits! Lentils with Carrots Serves 6 (150 calories per serving) Ingredients: 3 cups water ½ teaspoon salt 3 cups finely diced carrots 1 bay leaf 1 cup dried lentils 1 tablespoon butter 2 cloves minced garlic 1 tablespoon lemon juice ¼ cup minced fresh onion black pepper, to taste Directions: Combine water, carrots, lentils, garlic, onion, salt, and bay leaf in a saucepan. Bring to a boil, reduce heat, and simmer 25 minutes. Drain water off. Discard bay leaf. Stir in butter, lemon juice, and black pepper. What’s In Season?
