Some do not eat dairy or eggs • Types: • Vegans = pure vegetarians, only eat foods from plant • sources such as grains, dry beans and peas, fruits, • veggies, nuts, and seeds • Lacto Vegetarians = Eat dairy products in addition to foods • from plant sources • Ovo Vegetarians = Eat eggs in addition to foods from plant • sources • Lacto-ovo Vegetarians = Eat foods from plant sources, dairy • products and eggs

  4. Food Guides • Vegetarian Food Pyramid • Whole grain/cereals = 6-11 servings • Veggies = 3-5 servings • Fruit = 2-4 servings • Low-fat Dairy = 2-3 servings • Legumes, nuts, seeds, meat alternatives = 2-3 servings • Fats and oils = use sparingly

Special Considerations • Substitutes = soy and wheat for animal sources • Nutrient Concerns • Protein – usually not a problem, need to get complete • proteins through combos • Fat – still need to eat low-fat so don’t gain weight • Minerals – iron – eat right fruits and veggies and grains w • with vitamin C to aid absorption • Calcium – esp if don’t take in dairy = green veggies, • supplements
