  1. SLICE IT RIGHT!

  2. KNIFE SAFETY • Always use a cutting board. Hold the food firmly in place with your hand. • For our cutting boards, place a damp dishcloth under the cutting board to prevent slipping.

  3. Use a sharp knife instead of a dull knife. A dull knife requires that you exert more pressure, making you more likely to slip and cut yourself.

  4. Curl your finger tips under on the hand holding the food. • This prevents you from nicking your fingertips or losing part of your finger!

  5. Always cut away from yourself • For rounded foods, first cut a thin slice from the bottom so the food will sit flat on the cutting board.

  6. How to walk/handle a knife • Walk with the knife right against the side of your body with the blade facing downwards • When walking behind someone with a knife, say ‘behind’ to make the person aware that you are behind them to prevent run-ins.

  8. Chop or Mince • To cut into small pieces • Examples of foods: • Onion • Garlic • Celery

  9. Slice • To cut food into flat pieces • Examples of foods: • Cucumbers • Zucchini • Carrots

  10. Peel • To cut away the skin or a thin layer of the outside of fruits and vegetables • Examples of foods: • Apple • Pear • Onion

  11. Cube/Dice • To cut into small squares • Examples of foods: • Apples • Cheese • Bread

  12. Julienne • To cut food into long, thin strips • Examples of foods: • Cheese • Carrots • Peppers

  13. Section • To cut food into its natural sections • Examples of foods: • Orange • Grapefruit • Garlic

  14. Carve • To divide into pieces by cutting or slicing • Examples of foods: • Roast beef or pork • Roast chicken • Turkey
