Survey analysis • We usually eat fish once a week. • There are mostly marine fish and that is hake. • It is usually prepared fried or baked. • In most cases we are buying frozen fish and we choose by the price, not by the origin of the fish. • We mostly consumefish fillets, breadcrumbed fish sticks and canned fish.
Survey analysis • We don’t often eat fish in restaurants, but we would if someone else is paying for it (its expensive for most of us). • We are aware that we do not eat enough fishbut obviously the price and availability of the fish is the most important.
Fish as food • We have researched the nutritional value of fish, how the Croats usually prepare their fish, what spices do they useand how to recognize fresh fish. • Fish contains little fat and carbohydrates and lots of proteins, vitamins and mineralsand omega - 3 fatty acids.
Fish as food • We have learned that fresh fish has a mild odor, bright and clear eyes, gills are lightred from inside. • Fresh fish should be kept on ice, while with frozen fish the packaging must be intact.
Fish as food • Croats do not eat a lot of fish annually - about 21 kg, which is less than Italians (24 kg), French (33 kg), Spaniards (44 kg), Portuguese (57 kg) or unattainable Icelanders with 90 kg per year.
Fish as food • Although it is not often we eat fish, we have our favorite ways to prepare it : baked in the oven, on the grill or on a fork, preparing fish soup or fish stew, we fill or bread it etc. As side dish we add various vegetables or pasta.
Fish as food • Usual spices that we use when preparing fish are: parsley, bay leaf, basil, coriander, cumin, rosemary, marjoram, ginger, thyme, garlic and tarragon, and of course, salt and pepper.
Growing and processing offish in Croatia • The most common freshwater fish in Croatia are: carp, catfish, grass carp, pike and trout. • About 50 licensed growers are engaged in breeding freshwater fish in Croatia. Most of them breed trout and carp. • Fish farms produce about 9,500 tons of fishannually.
Growing and processing offish in Croatia • The most represented marine fish are: bream, John Dory, sea bass, hake, grouper, as well as sardines, sprat and tuna. • Several major refiners and distributors are engaged in processing marine fish: Ledo, Mardešić, Adria, Mirna and Sardina . These are factories, some of which have a tradition of over 100 years. • They mostly produce frozen fish, canned fish, spreads, etc.
Conclusion: • We have a habit of eating fish and fish products, but we do not consume them enough. • The main reason for that is the price of the fish and the lack of availability of fresh fish every day in our neighborhood. • Fish is prepared in different ways and different spices are used. • We need to eat more fish because it has a lot of nutrients and comes from clean rivers and clean sea.
