  3. SOME INFORMATION ABOUT KISIR KISIR is a traditionalMiddleEasternsidedishmadefromfinebulgur, parsley, andtomatoorpepperpaste. The main ingredient, bulgur, is a cerealfoodgenerallymadefromparboileddurumwheat. For kısır, a finelyground bulgur, unlikethecoarse bulgur usedforpilav, orsometimescouscous is used. Traditionally in Turkeykisir is madewithredpepperpaste. And as ourexperienceshows, Kisirgoesreallywellwithgrilledmeats, especiallylamb Commonadditionalingredientsincludeparsley, tomatopaste, springonion, sourpomegranatejuice (in southernregions of Turkey) orlemon, lettuceleaves, cucumber, and a lot of spices. It has a reddishcolourduetotomatopasteadmixture. It can be eatencoldandused as a saladormeze. Ifyouhavenever had Kisirbefore, you’vegottogive it a try. Thefreshtaste of theherbsandthescent of pomegranate, combinedwiththetomatoes, cucumbers, lettuceandoliveoil, makethissimplevegandishdelightfullyrich. Bon appetite…

INGREDIENTS • 1/2 cups of crackedwheat (fine bulgur) • 1/3 cup oliveoil • 1 cucumber, choppedfinely • 1 tspdriedmint • 2 tbsppepperpaste • 3/4 cups of boilingwater • 1/2 bunch of freshparsley/mint, choppedfinely • 3 springonions, chopped • 1/3 cup lemonjuice • 1/2 tspcumin • 1 tbsp salt totaste • 1 tbsppomegranatesauce

  5. STEP 1 Ina largebowl, placefine bulgur andaddboilingwater. Stirandleave bulgur for 5-10 minutestoabsorballthewater. Makesure that bulgur is not wet. The size of bulgur should be doubled.

  6. STEP 2 Then, addoliveoil, pepperpasteand salt.

  7. STEP 3 Addthismixturetopuffup bulgur andcombinethemusingyourspoon. Thenaddlemonjuice, cuminanddriedmint. Mixthemallandletthemcool.

  8. STEP 4 Finally, addcucumber, springonions, lettuce, parsley, mintand mix themall.

  9. STEP 5 Servewithcherrytomatoes, cucumbers, rocketsaladorlettuce, lemonandpomegranatesauce.

  10. EAT YOUR KISIR RIDE YOUR BIKE TO SCHOOL
