The components of a formulated food will generally have a combination of different structures • Solutions –water, sugars,salts • Colloids – proteins, gums, starch • Gels- formed from proteins, gums and starches or combinations • Foams – can be combination of proteins, proteins +lipids, etc. • Emulsions –lipids + emulsifiers
