When making sandwiches consider: • Textures • Fillings • Colors • Spreads, condiments • Hot or cold
Hot Sandwiches – Grilled, Deep Fried or Pizza • Open faced – one slice of bread on a plate with hot meat or filling covering it. • Grilled – butter the bread and brown on hot grill. Grilled cheese, ham and cheese, etc. • Panini – Grilled sandwich with bread grilled on a panini press. Compresses the sandwich
Deep fried sandwich • Monte Cristo – sandwich is dipped into beaten egg and deep fried. Filled with turkey, ham and Swiss cheese • Pizza – open-faced Italian pie that is baked.
Cold Sandwiches • 2 slices of bread and a filling of usually meat and cheese or spread – tuna, egg salad • Submarine – Long roll with several types of cheese, meat, lettuce, tomatoes. Also called grinders, hoagies, heroes. • Wrap – Flat bread like a tortilla, filling and rolled up
Cold Sandwich continued • Multi-decker – More than 2 slices of bread with several ingredients. Club sandwich is an example – 3 slices of bread, bacon, turkey and cut into 4 triangles • Canape – type of hors d’oeuvre. Small pieces of bread, cracker or crouton • Tea sandwich – small cold sandwiches, cut into shapes
