  3. Add the chocolate. Put a teaspoon of chocolate powder in the bottom of a coffee cup. Add the coffee. Put the correct amount of coffee in the filter basket and tap it to create a level surface. Use the tamper provided to compact the coffee. Filter. Lock the group handle into the machine and put the coffee cup underneath. Turn on the dosage button. The coffee should take 14-18 seconds to filter through for a single espresso and 20-25 seconds for a double, after which you should turn off the dosage button. Café Mocha

  4. Steam the milk. Milk can be steamed using the steam arm on your coffee machine. Turn the arm on full for 5 seconds before inserting it into the milk, as this will clean it through. Add the milk. Tap the jug on a work surface and swirl the milk around to create a shiny surface with the consistency of thick custard. Carefully pour the milk on top of the chocolate espresso mixture and serve.   5. Take a 12 oz., 16 oz., or 20 oz. plastic cup and fill it with ice cubes to the rim of the cup. For 12 oz. pull 2 shots of espresso. For a 16oz. pull 3 shots, and for 20 oz. pull 4 shots -- into shot glasses, not the cup. Pour the above mentioned shots into the cup over the ice so that the shots cool quickly. Top the cup off with more ice, to the rim. Add chilled filtered water, filling the cup. Put a lid on the cup and swirl the cup to mix the drink. Do not use a dirty spoon to mix the drink.   6. Chill metal pitcher first. The foam will be better. Fill metal pitcher 2/5 of the way full. Fresh whole milk (meaning that it hasn't been steamed before) will be easiest for this experiment. Place the thermometer securely inside the pitcher. Froth the milk by inserting the steam wand at a diagonal angle just below the surface of the milk. You are going to want the majority of the milk to be froth, Steam to 150 ºF (65 ºC). Cappuccino

  7. Place milk in refrigerator for 30 seconds or so. Tamp the ground espresso into the head and lock it into position on the espresso machine. Pouring shots is an art form: A perfect shot has a fluid heart, minimum body and a small helping of crema or foam on its surface. A "perfect shot" is pulled inside of 17-23 seconds. Pour your two shots into your coffee mug or equivalent. Pour the steamed milk, holding the froth back with a spoon, into the mug until it is half full. Scoop the remaining froth over the top of the milk until just above the rim of the mug. Cappuccino

  8. Fill the metal pitcher 3/5 of the way full with milk, or to the base of the pour spout. Place thermometer securely inside of the pitcher. Steam milk to 145ºF. The steam wand should be inserted diagonally just below the surface of the milk. When frothing make sure you are creating rotational flow in the steam pitcher and once the temperature of the milk is about 100ºF, raise the steam pitcher to cease frothing and continue to heat to above temp.   9. Tamp the ground espresso into the portafilter with roughly 40 lbs of pressure and lock it into the group head on the espresso machine. Pouring shots is an art form: A perfect shot has a fluid heart, minimum body and a small helping of crema or foam on its surface. A perfect shot is pulled inside of 17-23 seconds. Pour your two perfect shots into your coffee mug or equivalent. Texture your milk by rolling it around in the steam pitcher until glossy on the surface. Pour your steamed milk over the espresso.   10. Steam your milk. Put the tip of the nozzle at the surface of the milk. Get a good swirling action going and surf the hole. Keep on surfing the hole until the amount in the pitcher has doubled. Pull a double espresso shot. Give your pitcher another swirl. Pour the frothy milk from the pitcher into the espresso, right into the center. Machiatto
