  2. Old Wharf Restaurant and the number one question • Old Wharf Restaurant opened it’s doors to locals, tourists and guests of MACq 01 Hotel on June 1st along with the opening of MACq 01 Hotel. It is a seafood based restaurant along the Macquarie wharf overlooking the yachts and boats, Salamanca and Hobart’s famous Mt Wellington (kunanyi). The restaurant is lead by the Executive Chef and the Restaurant & Bar Manager, both who work well with each other creating and upkeeping the restaurant and it’s offerings from service, food and beverages. Currently on Tripadvisor, Old Wharf Restaurant sits at 85 of 443 restaurants in Hobart and has a star rating of 4.2 out of on OpenTable (as of April 3rd 2018). The main question that has been asked to go into this investigation is: Are there particular impacts that result in the cover changes of Old Wharf Restaurants Saturday nights? What could these be?

  3. Data Needed • Primary Data: collection of data information from ResPak, the restaurants only reservations system that displays all seatings and cover numbers. • Secondary Data: collection of online reviews from TripAdvisor and OpenTable, two leading online reviewing systems

  4. How was the needed data found • Primary data: through first hand availability of ResPak and the permission from the Restaurant & Bar Manager to use the following information. • Secondary data: through online researching and reviewing of the two reviewing websites.

  5. Analysing • Into investigating impacts on the amount of cover intakes on Saturday nights, first needed was to analysis data of the amount of cover numbers. In doing this, the collection of data from ResPak, the main and only booking system used was analysed. Through the system cover numbers were collected and with that the calculation of the mean, median and mode were made. The mean being 96.84, the median being 98.5 and the mode being 101, 98, 110, 99, 103 and 106 (each number appearing 3 times). From the collection the lowest and highest cover intake was found, the lowest being 53 people on June 3rd (2 days after the opening and the first Saturday dinner service for the restaurant) and the highest being 122 people on December 2nd. Analysing the given data the conclusion of impacts was made to: management changes, menu changes, local events, dates of the year and online reviews. Each impact was investigated into and the

  6. Charts and Data Presentation • The information gathered both primary and secondary was analysed and then categorised. Charts, diagrams and tables were then produced to present the information needed and found.

Recommendations • The changes of Menus in the months of August 2017 and February 2018 proved to be successes in that either within that month or the month after the average amount of cover numbers increased and showed visible success. Recommendation would be to continue changing the menu as much as possible, or to market the new menu’s across social media, paper and within the restaurant, The Story Bar and MACq 01 Hotel. Along with the menu training, ensure staff are being appropriately and drastically trained to have the confidence in selling the menu and answering guests enquires, this will also help with any negative reviews made online relating to staff. • Ensure that continuous staff training in both food and beverage knowledge is maintained. The staff are the face of Old Wharf Restaurant and with their own confidence to sell food and beverages the less negative online reviews that will be made available to potential guests. Overall helping to keep the cover amount strong and keeping it at a regular 96.84 guests.
