  4. 12-1 What Is Food Security and Why Is It Difficult to Attain? • Concept 12-1A Many of the poor suffer health problems from chronic lack of food and poor nutrition, while many people in developed countries have health problems from eating too much food. • Concept 12-1B The greatest obstacles to providing enough food for everyone are poverty, political upheaval, corruption, war, and the harmful environmental effects of food production.

Many People Do No Get Enough Vitamins and Minerals • Most often vitamin and mineral deficiencies in people in developing countries • Iron: component of hemoglobin transports oxygen to blood lack of it causes anemia: causes fatigue, increased infection, increased chance of death at childbirth • Vitamin A: golden rice, DNA from daffodil • Iodine: thyroid gland: metabolism, chronic lack cause stunted growth, mental retardation & goiter

Many People Have Health Problems from Eating Too Much • Overnutrition: food energy intake exceeds energy use & causes excess body fat • Similar health problems to those who are underfed • Lower life expectancy • Greater susceptibility to disease and illness • Lower productivity and life quality

  14. 12-2 How Is Food Produced? • Concept 12-2A We have sharply increased crop production using a mix of industrialized and traditional agriculture. • Concept 12-2B We have used industrialized and traditional methods to greatly increase supplies of meat, fish, and shellfish.

Food Production Has Increased Dramatically • Three systems produce most of our food • Croplands: 77% • Rangelands, pastures, and feedlots: 16% • Aquaculture: 7% • Importance of wheat, rice, and corn: 47% of calories, 42% of protein • Estimated that there are 50,000 plant species that people can eat, only 14 supply most of the world’s food • Tremendous increase in global food production • Since 1960: Technological advances, inorganic chemical fertilizers, irrigation, pesticides, high-yield grain, large #’s of livestock, poultry, fish in factory like conditions

Industrialized Crop Production Relies on High-Input Monocultures • Industrialized agriculture, high-input agriculture: uses heavy equipment & large amounts of financial capital • Goal is to steadily increase crop yield • Plantation agriculture: cash crops (bananas, soy beans, sugar cane, coffee usually for export to developed countries)

Traditional Agriculture Often Relies on Low-Input Polycultures • Traditional subsistence agriculture: human labor & draft animals to produce only enough for the family • Traditional intensive agriculture: farmers increase inputs of human labor, fertilizer & water to obtain higher crop yields • Polyculture • Benefits over monoculture: protection from pests, higher yields • Slash-and-burn agriculture: clearing small plots in tropical forests, grow a variety of crops for a few years until soil is depeleted & move to other plots
