  14. Similar Foods – Same Wells Do your best to keep similar foods such as all fried items or all steamed foods together in the same well. By keeping similar foods in the same wells, you customize each well’s individual control settings for specific products.

Portion sizes of products, installed locations ambient air temperature, pan configuration, and frequency of service doors opened all are factors in determining the optimal settings for specific applications.

Hot Food Into A Hot Case • Preheat unit for up to 30 minutes prior to food placement. • All hot foods going into the unit should be preheated – internal temperatures can drop by putting hot food into a cold pan. • The Hot Case is designed to hold all foods at or above 140° internal temperature. Probe to check internal temperature before placing in the Hot Case. A good guide is:

  17. “Work & Turn” Most foods naturally break down as time passes and in order to delay this process you should reconstitute (work and turn) applicable foods. Examples: Add cream to mashed potatoes. Add butter to steamed vegetables. Stir soups, gravies and sauces. “Pile” pieces of chicken, ribs, etc to insulate individual pieces and minimize drying. As portions diminish, move from a large pan to a smaller one to create full portion appearance as well as to freshen the product.

  18. Additional Operational Guidelines • Never open front glass during operation. This causes too much heat loss. During operational hours, cleaning or service of case should be from rear service doors ONLY. • Rear service doors should be closed at all times except to serve a customer. Upon fulfilling the customer order, service doors should be immediately shut. • Front glass can be lifted up and locked at a 45 degree angle for cleaning at the end of the day prior to preheating in the morning. • For best results, glass should be cool and a non-ammonia glass cleaner applied (reduces “streaking” on glass).
