Mother’s Day Dinner Recipe options! • GajarkaHalwaNothing beats the age-old traditional Indian dessert – GajarkaHalwa. Here’s what you need to make kheer at home. • Ingredients: • Cashew, Almonds, Raisins • Milk Maid • 500gms Carrots (Grated) • Ghee
How to make it: • This is a quick shortcut to the traditional gajarkahalwa recipe and work’s wonders as a mother’s day special recipe. All you need to do is take a deep pan and add ghee to it. Let it warm up and add 500gms grated carrots to it. Stir for 5 to 10 minutes until all of it has been soaked with ghee. • Next add milk maid to the mix and all the dry fruits mentioned. Stir for 5 to 10 minutes continuously on medium flame. • Put a lid on it and let it simmer on low flame for 5 mins. Garnish with grated dry fruits and serve hot! Chicken Gravy and Lemon Rice: • Chicken may sound like a herculean task but it works best if you know few tricks. Lemon rice can be alternated with regular white rice, jeera rice or brown rice. You can also switch to kerala parathas, butter naan or rotis – the side completely depends on your taste and liking. • For a typical mother’s day brunch, here’s what you need to do. • Ingredients: • 3 Onions (thinly sliced) • 3 tomatoes (diced) • 4 to 5 green chillies • Ginger garlic paste (2 tbsp) • Black pepper powder • Salt (to taste) • Cardamom, pepper and anise seeds
How to do it: • In a kadhai, add 3 to 4 tsp oil. Keep it on high flame. Next, add cardamom, anise seeds and pepper. • Next, add ginger garlic paste and green chillies and mix well. Take it out in a bowl. • Now, add oil to the pan and add the thinly sliced onions to the oil. Stir on medium flame and let it turn golden brown. • Take it leaving excess oil behind and then grind it in a paste. • Now, add oil to the pan, add the tomatoes, the mix in the bowl and the onion paste. Let it cook on medium flame (wait until the oil forms a layer on the top surface)
Now add red chilli powder, turmeric, salt and black pepper powder (you can choose to skip black pepper powder). • For the lemon rice, all you need to do is add 5 tbsp of lemon water in your rice, some cardamoms and curry leaves. Let it cook. • Trust us, your mother will certainly love the recipe and would thank you for adding a day of rest to her life and pampering her with the same. • This may not be your typical healthy dinner recipebut works best as a mother’s day special recipe.
