  3. SOUPS Soup is sometimes served as a starter at the beginning of a meal, therefore, it should not be too filling. However, it can be also served as a main lunchtime meal, especially in the winter. What makes a good soup? 1) A suitable stock as the basis, made from either packet stock cubes or boiled bones or meat giblets. 2) Texture 3) Colour 4) Well flavoured. Forms: dried, tinned, fresh.

  4. SOUPS Types: Clear- well flavoured stock with vegetable and/or meat chunks. Thick- soup made thick with addition of flour (starch) or potato. Broth- A thick soup, containing chunks of meat and vegetables. Chowder- Thick soup including meat.

  5. SOUPS Definitions: BISQUE- rich soup STOCKPOT- Used to make soup in. CONSOMME- thin, watery soup, doesn’t fill you up. TUREEN- Deep covered dish for soup, keeps it warm for long periods of time. Garnishing soup: • Swirl of cream • Croutons • Herbs i.e.. Parsley • Cheese

  6. TASK • 1) What types of soups are there? • 2) How can a soup be thickened? • 3) What makes a good soup? • 4) How should soups be garnished in the catering industry? • 5) A stock is the basis of a good soup, list the different ways of making stock.

Ingredients 3 leeks trimmed and chopped 150g potatoes 2 veg stock cubes 1pt boiling water Seasoning Fresh parsley Ground pepper Oil Corn flour 1 tbsp Method 1) Boil water, dissolve stock cubes in jug. 2) Chop onion finely and peel and chop potatoes. Put in pan. 3) Fry in a little oil, add trimmed and chopped leeks. 4) Add stock to pan, season and add finely chopped parsley. 5) Leave to simmer. Once veg is soft, blend. Leek and potato soup
